From Chirinos in the Cajamarca region of Northern Peru. Over 35 families comprise this co-op. Coffees are always cupped prior to shipment to add an additional layer of protection for us end users and that’s invaluable – many farms only check the coffee for visible aspects and that tells little about the end flavor!
This coffee is double fermented, similar to many Kenyan coffees, which produces a deeper level of acidity and brightness. Excellent!
